Brownie Points

Brownie Point

Anything with chocolate makes me happy. I like my chocolate bittersweet and of good quality even in baking. This simple recipe can be whipped up relatively fast and with few ingredients.

1/2 cup butter (melted) or vegetable oil
1 cup sugar
1 teaspoon vanilla
2 large eggs
1/4 teaspoon baking powder
1/3 cup cocoa powder
1/4 teaspoon salt
1/2 cup flour

1. Preheat oven to 350°. Grease a 8″ or 9″ square pan.
2. Melt the butter if you haven’t already. Mix with sugar until well blended.
3. Add eggs and vanilla; stir just until blended.
4. Mix all dry ingredients in a separate bowl, and stir dry ingredients into the wet mixture.
5. Pour batter into the pan, and bake for 20 minutes or until sides just start to pull away from the pan. Do not overbake.
8. Cool completely before cutting.
* Note: Double the recipe and bake in a 9 x 13 pan. If you double the recipe, you will need to cook longer than 20 minutes.

Review: This is a very easy recipe. We only had brown sugar and used just under 1 cup of sugar, but the bitterness of the natural cocoa probably evened it out. For the cocoa, we used Fry’s premium cocoa. I highly suggest using good quality cocoa at all times. I think it just makes things a bit better, and Fry’s makes good hot chocolate too. The brownies don’t rise very much, and it can be cakey if you’re not careful. To make the brownies gooey, we needed to undercook it more, but they still tasted great. Nice, dense, and delicious with a glass of milk. Next time, I’ll consider leaving out one egg and underbaking it at least five minutes.
